A 35-year restaurant veteran is opening a breakfast and lunch café later this month at 321 N. Tejon St. – the location of the failed Tejon Street Market.

Flavors on Tejon will open on May 31.

The café, called Flavors on Tejon, is owned by Joe Ierisi, who also will be doing much of the cooking.

Entrée prices range from $5.95 to $14.95.

“We’re going to attract business people, really the whole downtown area,” Ierisi said. “We’re going to do some creative things – really the place is my canvas.”

Ierisi owned a similar restaurant in Fort Collins for 20 years and said he plans to open more restaurants in the future.

“We’re going to open several locations,” he said. “Maybe not in Colorado Springs, but we’re definitely planning to be here long-term.”

Flavors on Tejon St. will open for business at 7 a.m. May 31 and will be open from 7 a.m. to 3 p.m. Monday through Friday and 8 a.m. to 2 p.m. Saturday and Sunday.

“We’re looking forward to the reception that we get from business people downtown,” he said.
